Low Carb Cricket Protein Pancakes


  • 2 spoonfuls (50g) Bugvita cricket protein blend

  • 1 large, ripe banana (the riper the better)

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 2 large eggs


Time - 20 mins

  1. Split out the egg whites from your eggs and put the yolks to one side. In a large bowl, beat the egg whites with an electric whisk until they forms soft peaks.

  2. In a separate bowl combine the rest of the ingredients, including the left over egg yolks. Try to mash in the banana so the mixture has a fairly smooth consistency but don't worry too much about the odd lumpy bit!

  3. Gently fold in the egg white to the cricket protein mixture, trying to keep as much air in it as possible.

  4. Spoon mixture onto hot pan - should be enough for four medium sized pancakes. Cook each pancake for about 1 min on each side and serve immediately. Goes really well with yogurt and fruit.
